Milk & Honey Chai Tea

7 cups of water
1 tblsp fennel or anise seed
6 green cardamom pods
12 cloves
1 cinnamon stick
1/4 inch ginger root thinly sliced
1/4 tsp black pepper corns
2 bay leaves
2 tblsp loose black tea or 4 black tea bags
1 cup of milk (soy or almond milk can also be used)
6 tblsp honey (more or less to taste)

In a saucepan, combine first 8 ingredient (spices and water) in a pan, cover and bring to a medium boil for 5 minutes. Turn off heat and let steep for 10 minutes. Add tea and bring to a boil again, simmering for 5 minutes. Add milk and honey. Makes about 8 cups.

Perfect beverage for the fall season when gathering with friends and family for conversation and warm memories.
